Description

Joschik Little Hedgehog is a festive cake from Russian cuisine, prepared in the Thermomix®. The main ingredients are eggs, sugar, flour, butter and milkmaid. This dessert is ideal for special occasions and spoils with its sweet taste. The preparation time is about 60 minutes, of which 45 minutes are active working time. The recipe yields approximately 11 servings.

Ingredients (8 ingredients)

  • 8 Stück Eggs
  • 140 g Sugar
  • 2 Pck. Vanilla sugar
  • 2 Pck. Baking powder
  • 120 g Oil
  • 320 g Flour
  • 250 g Butter (room temperature)
  • 1 Dose Milkmaid

Preparation (10 steps)

Preheat oven

Preheat oven to 200°C top/bottom heat.

Stir eggs

Put 8 eggs in the mixing bowl and stir for 30 sec/speed 3.

Add sugar, vanilla sugar, baking powder and oil

Add 140 g sugar, 2 packets vanilla sugar, 2 packets baking powder and 120 g oil and stir for 30 sec/speed 4.

Add flour and mix

Thermomix® Setting

Add 320 g flour and mix for 30 sec/speed 5. Push everything down from the edge of the mixing bowl and mix again for 30 sec/speed 5.

Clean mixing bowl

Rinse and dry the mixing bowl.

Bake dough

Divide the dough on two baking trays, spread a little and bake one after the other for about 10-15 minutes. Let cool.

Cut out circles and process leftovers

Cut out round circles with a glass, put the cut-out remains in the mixing bowl and chop for 3 sec/speed 7. If necessary, stir everything with the spatula and chop again for 2 sec/speed 7. Transfer to a bowl.

Prepare cream

Thermomix® Setting
30 sec/Speed 4

Put 250 g butter (room temperature) and 1 can milkmaid in the mixing bowl and stir for 30 sec/speed 4. Push everything down from the edge of the mixing bowl and stir again for 30 sec/speed 4.

Assemble dough circles

Spread two dough circles on one flat side with the cream and stick them together. Now spread the rest and roll in the sprinkles.

Let little hedgehogs steep

Let the finished little hedgehogs steep a little overnight.
