Description
A classic Austrian dessert, shredded pancake caramelized and served with fruit compote.
Ingredients (8 ingredients)

125 g Flour
-
0.125 ltc Milk
-
2 Stück Eggs

1 Prise Salt

0.5 EL Sugar

60 g Butter
-
50 g Raisins

Compote
Preparation (9 steps)
Separate eggs
Separate 2 eggs. The egg white will be needed later.
Mix egg yolk
Add 125 g flour, 1/8 l milk and the egg yolk to the mixing bowl and mix for 20 sec./speed 4.
Add salt
Add 1 pinch of salt and mix for another 5 sec./speed 3.
Whisk egg white
Insert the butterfly whisk. Add the previously separated egg white to the mixing bowl and whisk until stiff for 2 min./speed 3.5.
Fold in egg white
Carefully fold the egg white and ½ tbsp sugar into the batter in the mixing bowl. Remove butterfly.
Melt butter
Melt 60 g butter in a pan.
Bake batter
Pour the batter into the pan and sprinkle raisins over it. Bake over medium heat until the underside is golden brown.
Tear Emperor's Mess
Tear the Emperor's Mess into pieces with 2 forks and bake until golden brown.
Serve
Serve with compote.
