Description

  • 250 g Onions
  • 40 g Butter
  • 500 g Sauerkraut
  • 100 ml Vegetable broth
  • 100 g Cream
  • 1 TL Caraway
  • 1 TL Marjoram
  • 1 TL Salt
  • 0.5 TL Pepper
  • 500 g Smoked pork loin in slices
  • 2 Rolle Puff pastry
  • 1 Stück Egg yolk
  • Milk

Preparation (10 steps)

Chop onions

Put 250g onions in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add 40g butter to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add sauerkraut and simmer

Add 500g sauerkraut, 100ml vegetable broth, 100g cream, 1 tsp caraway, 1 tsp marjoram, 1 tsp salt and 1/2 tsp pepper to the onions in the mixing bowl and simmer for 20 min./100°C/reverse speed 1. Leave the measuring cup on.

Fry smoked pork loin

Fry 500g smoked pork loin in slices in a separate pan from both sides.

Season sauerkraut

After the time has elapsed, season the sauerkraut with salt and pepper and add more seasoning if necessary.

Preheat oven

Preheat the oven to 200°C top/bottom heat.

Prepare puff pastry

Roll out 2 rolls of puff pastry and spread half of the sauerkraut on each. Distribute the fried smoked pork loin slices on top and cover with the remaining sauerkraut.

Seal puff pastry

Roll up the puff pastry and seal the ends well.

Brush puff pastry

Whisk 1 egg yolk with a little milk and brush the puff pastry rolls with it.

Baking

Place the puff pastry rolls on a baking sheet lined with baking paper and bake in the preheated oven for approx. 30 minutes until the puff pastry is golden brown.
