Ingredients (12 ingredients)

  • 5 piece Egg
  • 100 g Almonds (ground)
  • 50 g Golden flax seeds
  • 50 g Chia seeds
  • 50 g Sunflower seeds
  • 20 g Coconut flour
  • 50 g Psyllium seed husks ground
  • 200 g Cottage cheese
  • 1 Packg. Baking powder ((Cream of tartar baking powder))
  • 2 tbsp Apple vinegar
  • 1 tsp Salt
  • 1.5 tsp Bread spice

Preheat oven

Preheat the oven to 180°C (convection).

Mix dry ingredients

Put all dry ingredients (golden flax seeds, chia seeds, sunflower seeds, coconut flour, psyllium seed husks ground, baking powder, salt, bread spice) into the mixing bowl and mix: 10 Sec./level 4.

Add eggs, cottage cheese and apple vinegar to the dry ingredients in the mixing bowl and mix: 20 Sec./level 4.

Knead dough

Thermomix® Setting

Knead the dough in the mixing bowl for 2 Min./kneading stage.

Shape bread

Remove the dough from the mixing bowl, knead well and shape into a loaf of bread.

Cut bread

Use a knife to lightly cut the loaf of bread on the surface and pull it apart. This results in the typical bread shape.

Bake bread

Bake the bread for 50-60 minutes.
