These crispy date and pecan treats are a delightful twist on classic cookies. I've been making them for years, and they're always a hit! The combination of sweet dates, crunchy pecans, and crispy rice cereal creates a unique texture and flavor that's simply irresistible. Ingredients (8 ingredients)

  • 1 cups shredded coconut
  • 1 cups white sugar
  • 0.5 cups margarine, softened
  • 2 piece eggs, beaten
  • 0.5 cups chopped pecans
  • 0.5 pound chopped dates
  • 2.5 cups crispy rice cereal
  • 1 tsp vanilla extract

Prepare Coconut

Place shredded coconut in a shallow bowl for later use. This is for coating the cookies after they are formed.

Combine Sugar, Margarine, and Eggs

Add 1 cup white sugar, ½ cup softened margarine, and 2 beaten eggs to the Thermomix bowl.

Cook the mixture for 10 min/60°C/Stufe 2, stirring continuously with the spatula to ensure even heating and prevent sticking.

Add ½ cup chopped pecans and ½ pound chopped dates to the mixture in the Thermomix bowl.

Continue Cooking

Continue cooking for 3 min/60°C/Stufe 2, stirring continuously with the spatula, until the mixture thickens.

Add Cereal and Vanilla

Add 2 ½ cups crispy rice cereal and 1 tsp vanilla extract to the Thermomix bowl.

Mix Ingredients

20 sec/Speed 3/Linkslauf Reverse

Mix for 20 Sec./Stufe 3/Linkslauf to combine the cereal and vanilla extract evenly into the mixture. Use the spatula to help.

Form and Coat Cookies

Remove the mixture from the Thermomix bowl. Quickly roll the mixture into 1-inch balls. Roll each ball in the shredded coconut to coat completely. Place the coated balls on waxed paper to cool and set.
