Description

This creamy kohlrabi vegetable is a true classic and tastes simply delicious! I like to make it when I get fresh kohlrabi from the market. Preparation in the Thermomix® is super easy and quick. The kohlrabi is cooked al dente and then refined in a creamy sauce with nutmeg. Goes perfectly with potatoes, rice, meat or fish. A great vegetarian dish that the whole family will love! Especially enjoyable in spring and summer.

Ingredients (9 ingredients)

  • 3 piece Kohlrabi (medium-sized)
  • 1 piece Onion
  • 1 tbsp Butter
  • 1 tbsp Wheat flour Type 405
  • 200 ml Vegetable broth
  • 200 ml Cream
  • Salt
  • Pepper
  • 15 g Nutmeg (freshly grated)

Preparation (7 steps)

Prepare kohlrabi

Peel 3 medium-sized kohlrabi and cut into approx. 1 cm cubes. Place the kohlrabi cubes in a saucepan, cover with lightly salted water and cook al dente for 10–12 minutes. Then drain and set aside.

Chop onion

Peel 1 onion, quarter it and place it in the mixing bowl. Chop for 3 sec./level 5.

Sauté onion

Add 1 tablespoon of butter to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Prepare roux

Add 1 tablespoon of wheat flour type 405 and sauté for 2 min./100°C/level 2.

Prepare sauce

Thermomix® Setting
5 min/194°F/Speed 2 90

Add 200 ml vegetable broth and 200 ml cream to the mixing bowl and simmer for 5 min./90°C/level 2 until the sauce becomes creamy. Use a spatula to scrape the mixture from the edge.

Add kohlrabi and mix

Add the drained kohlrabi cubes to the mixing bowl and stir in for 2 min./90°C/reverse rotation level 1.

Season with salt, pepper and 15 g freshly grated nutmeg and stir in for 1 min./90°C/reverse rotation level 1.
