Description

Hearty grain bread, perfect for breakfast or dinner.

Ingredients (11 ingredients)

  • 50 g Linseed
  • 50 g Sunflower seeds
  • 50 g Pumpkin seeds
  • 50 g Sesame
  • 300 ml Water, lukewarm
  • 0.5 Würfel Yeast, fresh
  • 250 g Rye flour, Type 1150
  • 250 g Wheat flour, Type 1050
  • 1.5 TL Salt
  • 1 EL Honey
  • 1 EL Vinegar

Preparation (6 steps)

Grind grains

Place linseed, sunflower seeds, pumpkin seeds and sesame in the mixing bowl and grind for 15 sec/speed 10.

Pour grains into a bowl

Pour the ground grains into a bowl and set aside.

Mix water and yeast

Put water and yeast in the mixing bowl and mix for 2 min/37°C/speed 2.

Add remaining ingredients and knead dough

Add rye flour, wheat flour, salt, honey, vinegar and the ground grains and process into a dough for 3 min/kneading stage.

Let the dough rise

Place the dough in a bowl, cover and let rise in a warm place for about 2 hours until the volume has doubled.

Shape and bake the dough

Shape the dough into a loaf on a floured work surface and place in a greased loaf tin (approx. 20 x 10 cm). Let rise again for about 30 minutes. Preheat the oven to 200°C top/bottom heat. Bake the bread for about 50 minutes.
