Description

These spiral fritters, also called Strauben, are a traditional dessert that I often prepare for Carnival or for a special brunch. The recipe is simple, but it requires a bit of patience to create the perfect spiral shape during frying. The batter, made from flour, milk, and eggs, is light and fluffy. The final touch with strawberry jam and powdered sugar makes them irresistible. They are perfect to enjoy hot, freshly fried, and are a real hit with young and old. Try them, they will win you over!

Ingredients (9 ingredients)

  • 250 g flour
  • 250 ml milk
  • 3 piece eggs
  • 30 g butter
  • 30 g sugar
  • 1 q.b. fine salt
  • 1 q.b. peanut seed oil for frying
  • 1 q.b. strawberry jam
  • 1 q.b. powdered sugar

Preparation (9 steps)

Preparation of the batter

Thermomix® Setting
20 sec/Speed 4

Pour 250 g of flour and 250 ml of milk into the Thermomix bowl. Mix for 20 Sec./Stufe 4 until a homogeneous and creamy mixture is obtained.

Adding the yolks

Thermomix® Setting
15 sec/Speed 3

Add 3 egg yolks to the mixture in the bowl and mix for 15 Sec./Stufe 3 to blend well.

Incorporation of the melted butter

Thermomix® Setting
10 sec/Speed 2

Melt 30 g of butter in a saucepan or in the microwave. Pour the melted butter into the bowl and mix for 10 Sec./Stufe 2 to incorporate it into the batter.

Whipping the egg whites until stiff

In a separate bowl, pour the 3 egg whites, a pinch of fine salt and 30 g of sugar. Beat with electric whisks until stiff peaks form.

Gentle incorporation of the egg whites

Transfer the batter from the bowl to a large bowl. Gently fold the whipped egg whites into the yolk batter, pouring them in three times and mixing gently from the bottom up with a spatula.

Preparation for frying

Transfer the soft and fluffy batter into a piping bag without a nozzle. Cut the tip of the piping bag to about 1.5 centimeters.

Frying the fritters

Heat plenty of peanut seed oil in a large pan. When the oil is hot, form spirals directly in the hot oil with the piping bag.

Cooking and draining

Cook the fritters for 2-3 minutes per side, turning them gently with a slotted spatula and tongs. Transfer the fritters to a plate lined with absorbent paper to remove excess oil.

Service

Move the fritters to a dessert plate and serve hot with strawberry jam and powdered sugar.
