Description

These Turkish sesame pretzels, also called Simit, are an absolute delight! I often bake them on weekends for a hearty breakfast or as a delicious snack in between. Thanks to the yeast, the dough is nice and fluffy and the sesame seeds provide a great crunch. The preparation is a bit time-consuming, but the result is well worth it. They taste particularly delicious when still warm from the oven. If you like, you can use honey or beet syrup instead of grape syrup. A recipe that is always well received by friends and family!

Ingredients (9 ingredients)

  • 0.5 cube Yeast
  • 7 g Dry yeast
  • 1 tsp Sugar
  • 500 g Wheat flour (type 550)
  • Wheat flour (for rolling out)
  • 1.5 tsp Salt
  • 1.5 tsp Olive oil
  • 120 g Turkish grape syrup (Pekmez, alternatively honey or beet syrup)
  • 150 g Sesame seeds

Preparation (10 steps)

Activate yeast

Put ½ cube of yeast (or 7 g of dry yeast), 1 tsp of sugar and 300 ml of lukewarm water into the mixing bowl and mix for 2 min./37°C/speed 2. Then let it rest in the mixing bowl for 15 minutes.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Put 500 g wheat flour (type 550), 1 ½ tsp salt and 1 ½ tsp olive oil into the mixing bowl. Add the activated yeast and knead for 3 min./kneading stage to form a smooth dough.

Let the dough rise

Shape the dough into a ball, place in a bowl, cover with a damp kitchen towel and let rise in a warm place for at least 1 hour.

Shape dough

Roll out the dough evenly on a floured work surface and divide into 6 equal pieces. Shape the dough pieces into balls and cover with a cloth.

Shape rolls

Shape each piece of dough into a thin roll about 80 cm long. Fold in the middle so that you get two parallel strips of dough.

Twist ropes

Twist the two strips of dough in opposite directions to form a 40 cm long rope. Join the ends to form a ring and press firmly. Reach through the dough ring with your fingers and roll the joined end of the dough ring over the work surface to seal it well.

Prepare syrup

Put 120 g Turkish grape syrup (Pekmez, alternatively honey or beet syrup) and 2 tbsp water into the mixing bowl and mix for 10 sec./speed 3.

Apply sesame seeds

Spread sesame seeds on a flat plate. First brush the dough rings on both sides with the syrup from the mixing bowl, then roll in sesame seeds. Place on 2 baking trays lined with baking paper, leaving some space between them.

Let the sesame rings rise

Cover the sesame rings and let them rise for another 15 minutes.

Baking

Bake the sesame rings in a preheated oven (electric oven: 200 °C / convection oven: 180 °C) one sheet at a time for 17–20 minutes. Remove and let cool for about 5 minutes.
