Description

This rustic seed bread is an absolute delight and super easy to prepare. I often bake it on the weekend for an extensive breakfast or as a side dish for grilling. The combination of whole wheat spelt flour and the various seeds such as sunflower seeds, sesame seeds and flax seeds makes it particularly aromatic and nutritious. The fruit vinegar gives the bread a slightly sour note that harmonizes wonderfully with the roasted aromas. It is a great bread for those who like it uncomplicated and flavorful. If you like, you can replace the seeds with other nuts or dried fruits. The bread keeps well for a few days and also tastes excellent toasted!

Ingredients (8 ingredients)

  • 1 cube Yeast
  • 450 ml Lukewarm water
  • 500 g Whole wheat spelt flour
  • 50 g Sunflower seeds
  • 50 g Sesame
  • 50 g Linseed
  • 2 tsp Salt
  • 2 tbsp Fruit vinegar

Prepare yeast

Add 1 cube of yeast and 450 ml lukewarm water to the mixing bowl and mix for 20 sec./speed 3.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Add 500 g whole wheat spelt flour, 50 g sunflower seeds, 50 g sesame, 50 g linseed, 2 tsp salt and 2 tbsp fruit vinegar to the mixing bowl and process into a dough for 2 min./kneading stage.

Bake bread

Place the dough in a greased loaf tin and place in the cold oven. Do not let the bread rise. Set the oven to 200°C top/bottom heat and bake the bread for 60 minutes.

Finish baking bread

Remove the bread from the mold and, if necessary, bake for another 10 minutes at 200°C top/bottom heat to obtain a crispy crust.
