This Chicken Breast Wrapped in Puff Pastry with Spinach is a delightful dish that's perfect for a special occasion or a weekend brunch. I've been making this recipe for years, and it's always a hit! The combination of tender chicken breast, creamy spinach filling, and flaky puff pastry is simply irresistible. It's surprisingly easy to make, especially with the help of the Thermomix®. The spinach filling comes together quickly, and the Thermomix® makes it easy to chop the garlic and mix the ingredients. The dish is best served warm, and it pairs well with a simple salad or roasted vegetables.

Ingredients (14 ingredients)

  • 10 ounce package frozen chopped spinach
  • 5 ounce skinless, boneless chicken breast halves
  • 1 piece large egg
  • 1 tbsp water
  • 1 sheet frozen puff pastry, thawed
  • 1 tbsp butter
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp mayonnaise
  • 1 tbsp grated Parmesan cheese
  • 1 tsp ground thyme
  • salt
  • ground black pepper
  • 3 slice provolone cheese

Preparation (7 steps)

Preheat the oven

Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. This step is done outside of the Thermomix.

Cook the spinach

Place spinach in a microwave-safe bowl. Cover and microwave on medium power for 6 minutes. Remove cover and stir. Remove to a strainer and let cool. This step is done outside of the Thermomix.

Prepare the chicken and pastry

While the spinach is cooking, butterfly the chicken without cutting all the way through. Whisk egg and water together in a small bowl. Unfold pastry sheet and cut down the folds to make 3 equal pieces. These steps are done outside of the Thermomix.

Sauté the chicken

Melt butter in a large skillet over medium heat and add chicken. Sauté until no longer pink in the center and the juices run clear, 2 to 3 minutes per side. Remove to a plate. This step is done outside of the Thermomix.

Prepare the spinach mixture

Squeeze spinach to remove excess water. Add 1 clove garlic to the mixing bowl and chop for 3 Sec./Stufe 7. Scrape down the sides of the bowl with the spatula. Add the squeezed spinach, 1 tablespoon lemon juice, 1 tablespoon mayonnaise, 1 tablespoon grated Parmesan cheese, 1 teaspoon ground thyme, salt, and pepper to taste. Mix for 10 Sec./Stufe 3.

Assemble the chicken

Put 1/3 of the spinach mixture in each open chicken breast and top with a 1 slice of provolone cheese. Fold the top of each chicken breast in order to sandwich the spinach and cheese in between. Place each chicken breast on a piece of puff pastry; wrap the pastry around the breast and tuck underneath to seal. Transfer to the prepared baking sheet and brush with egg wash. This step is done outside of the Thermomix.

Bake the chicken

Bake in the preheated oven until pastry is golden brown, about 30 minutes. This step is done outside of the Thermomix.
