Description

This turkey blanquette dish is a revisited classic, perfect for family meals or special occasions. The turkey, slowly simmered with fresh vegetables and a bouquet garni, becomes incredibly tender and flavorful. The creamy sauce, prepared with a light roux and fresh cream, envelops the meat and mushrooms for a comforting and delicious result. I find it's a great way to enjoy the flavors of fall and winter. Accompanied by rice or potatoes, this blanquette is a real treat. A dish I often prepare, especially when it's cold outside!

Ingredients (12 ingredients)

  • 800 g turkey stew (blanquette)
  • 1 piece onion
  • 100 g canned Paris mushrooms
  • 1 piece carrot
  • 80 g smoked bacon
  • 0.5 piece leek
  • 30 g butter
  • 15 cl liquid cream
  • 1 c. à s. flour
  • 1 bouquet garni
  • 1 cube poultry broth
  • 1 clou of clove

Preparation of vegetables and meat

Thermomix® Setting

Put 1 peeled onion in the bowl and chop 3 Sek./Stufe 5. Add 30 g of butter and cook 3 Min./120°C/Stufe 1. Add 800 g of turkey stew, 1 carrot cut into rounds, ½ leek cut into pieces, 1 poultry broth cube, 1 clove and 1 bouquet garni. Cover with water to the height of the meat, salt and pepper. Cook 60 Min./100°C/Stufe 1.

Preparation of the roux

Remove the meat and vegetables from the bowl and set aside. Empty the bowl. Put 30 g of butter in the bowl and melt 2 Min./50°C/Stufe 2. Add 1 tbsp of flour and cook 3 Min./100°C/Stufe 2.

Preparation of the sauce

Add the meat cooking broth (about 500 ml) to the roux and cook 5 Min./90°C/Stufe 3. Add 15 cl of liquid cream, salt and pepper. Mix 1 Min./Stufe 2.

Cooking bacon and mushrooms

5 min/248°F/Speed 1 120

Put 80 g of smoked bacon and 100 g of drained canned Paris mushrooms in the bowl. Cook 5 Min./120°C/Stufe 1.

Assembly and service

Thermomix® Setting
1 min/Linkslauf Speed 1 Reverse

Add the turkey, vegetables, bacon and mushrooms to the sauce. Gently mix 1 Min./Linkslauf Stufe 1. Serve hot.
