Description

This spinach lasagna with creamy cream cheese is an absolute highlight for the whole family! I've been making it for years and it's always a hit. The fresh spinach harmonizes perfectly with the creamy cream cheese and the spicy tomato sauce. The lasagna sheets create a great consistency. The preparation takes a little while, but it's definitely worth it! Ideal for a cozy dinner or as a gift for a party. And the best thing: it's vegetarian!

Ingredients (16 ingredients)

  • 800 g Leaf spinach
  • Salt
  • 2 piece Onions
  • 2 clove Garlic cloves
  • 2 tbsp Oil
  • 600 g Double cream cheese
  • White pepper
  • Ground nutmeg
  • 1 tbsp Tomato paste
  • 1 tbsp Herbs
  • 400 g Sieved tomatoes
  • Sweet paprika
  • 250 g Lasagna pasta sheets
  • 100 g Grated Parmesan or vegetarian hard cheese
  • 50 g Grated Gouda cheese
  • Marjoram for garnish

Preparation (7 steps)

Prepare spinach

Sort, clean and wash the spinach thoroughly. Bring water to a boil in a saucepan and add salt. Blanch the spinach in it for about 2 minutes. Then drain, rinse with cold water and let it drain. Squeeze well and chop coarsely. Set aside.

Chop onions and garlic

Peel the onions, halve them and put them in the mixing bowl with the garlic cloves. Chop for 3 sec./speed 5.

Sauté onions and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp oil and sauté for 3 min./120°C/speed 1.

Prepare cream cheese

Thermomix® Setting
2 min/140°F/Speed 2 60

Add 600 g double cream cheese and stir for 2 min./60°C/speed 2 until the cream cheese is smooth and creamy.

Stir in spinach

Thermomix® Setting
1 min/Linkslauf/Speed 1 Reverse

Add the chopped spinach and stir in for 1 min./reverse/speed 1. Season with salt, pepper and nutmeg.

Prepare tomato sauce

Thermomix® Setting
3 min/248°F/Speed 1 120

Remove the spinach and cream cheese cream from the mixing bowl and set aside. Add 1 tbsp oil to the mixing bowl, add 1 tbsp tomato paste and 1 tbsp herbs and sauté for 3 min./120°C/speed 1.

Simmer tomato sauce

5 min/212°F/Speed 1 100

Add 400 g sieved tomatoes and simmer for 5 min./100°C/speed 1. Season with salt, pepper and sweet paprika.
