Description

This classic Lasagne Bolognese is a hearty and filling dish, ideal for a family meal or for guests. With fresh ingredients and a creamy béchamel sauce, it is a real treat. The preparation takes about 90 minutes and yields 6 servings. A hearty main course for the cold season.

  • 1 piece Onion
  • 2 Zehen Garlic
  • 1 bunch smooth parsley
  • 1 tbsp Olive oil
  • 500 g mixed minced meat
  • 1 tbsp Oregano
  • 2 tbsp Tomato paste
  • 800 g Peeled tomatoes - canned
  • 12 piece Lasagne sheets
  • 150 g Grated cheese
  • 30 g Butter
  • 25 g Flour
  • 500 ml Milk
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg

Preparation (9 steps)

Chop onion, garlic and parsley

Put 1 onion, 2 cloves of garlic and 1 bunch of smooth parsley in the mixing bowl and chop for 5 sec./speed 5. If necessary, push down with the spatula.

Fry minced meat (NOT in the Thermomix!)

Heat 1 tbsp olive oil in a pan and fry 500 g of mixed minced meat in it. Season with salt and pepper. Add the chopped onion and garlic and fry briefly.

Prepare Bolognese

Put the fried minced meat in the mixing bowl. Add 2 tbsp tomato paste and fry for 2 min./120°C/speed 1. Then add 800 g peeled tomatoes (canned), 1 tbsp oregano and the chopped parsley and simmer for 30 min./100°C/speed 1.

Prepare béchamel sauce

Put 30 g butter in the mixing bowl and melt for 3 min./50°C/speed 1.

Make a roux

Add 25 g flour and sauté for 3 min./100°C/speed 2.

Finish béchamel sauce

Thermomix® Setting

Add 500 ml milk and bring to the boil for 8 min./90°C/speed 3, stirring, until a creamy sauce forms. Season with salt, pepper and nutmeg.

Preheat oven

Preheat the oven to 180 degrees top and bottom heat.

Layer lasagna

Layer the lasagna in a baking dish as follows: Bolognese, then alternating layers of lasagna sheets (12 pieces), Bolognese and béchamel sauce. Finish with the sauce.

Sprinkle with cheese and bake

Cover the lasagna with 150 g grated cheese and bake in the preheated oven for 30 minutes.

About this recipe

Lasagne Bolognese, a classic of Italian cuisine, is more than just a recipe for me. It is a reminder of cozy Sunday meals in my childhood, of the scent of tomatoes and herbs that filled the whole house. Every family has its own secret for the perfect lasagna, and this is my interpretation, refined by the possibilities of the Thermomix®. The quality of the ingredients is crucial for the taste. The mixed minced meat, ideally from the butcher, should not be too lean, as the fat is a flavor carrier. The onion and garlic form the aromatic base of the Bolognese, while the fresh parsley adds a fine, green note. The canned tomatoes, preferably San Marzano, provide a fruity sweetness and acidity. Oregano is the typical spice for Bolognese, but a pinch of thyme or rosemary can't hurt either. The grated cheese, a mixture of Parmesan and Mozzarella, provides a golden brown crust and a hearty taste. The Thermomix® makes preparation much easier. Chopping onion, garlic and parsley is lightning fast and even. When browning the minced meat, it is important not to overload it so that it fries and does not cook. The Bolognese simmers in the Thermomix® without having to stir constantly. The béchamel sauce is guaranteed to succeed without lumps thanks to the precise temperature control of the Thermomix®. Be sure to add the milk slowly and do not cook the sauce for too long, otherwise it will become too thick. For a vegetarian version, the minced meat can be replaced by soy granules or lentils. For a vegan version, you can use plant-based alternatives instead of milk and butter and omit the cheese or replace it with vegan cheese. Experiment with different spices: A pinch of chili provides a pleasant spiciness, while bay leaf or juniper berries give the Bolognese a deeper note. Serve the lasagna with a fresh salad and a crispy bread. A glass of red wine rounds off the dish perfectly. Leftovers can be easily stored in the refrigerator and reheated the next day. The lasagna can also be prepared well in advance: Layer it the day before and bake it just before serving. This gives you more time for your guests.
