Description

This asparagus and ham lasagna is an absolute highlight in spring! I make it every year during asparagus season and it's always a hit. The tender asparagus harmonizes perfectly with the salty ham and the creamy sauce. The preparation takes a little while, but it's definitely worth it. The lasagna tastes particularly delicious when garnished with fresh parsley. A great dish for a festive meal or a cozy brunch with friends and family. The lasagna can also be prepared well in advance and stored in the refrigerator.

Ingredients (10 ingredients)

  • 2 kg white asparagus
  • to taste Salt
  • 1 tsp Sugar
  • 105 g Butter
  • 2 Tüten Sauce Hollandaise
  • 200 g Whipping cream
  • 4 piece Eggs (Gr. M)
  • to taste Pepper
  • 250 g cooked ham in slices
  • Parsley for sprinkling or garnish

Preparation (12 steps)

Prepare asparagus

Wash, peel, and cut off the woody ends of 2 kg of white asparagus. Set the asparagus aside.

Cook asparagus

Thermomix® Setting
15 min/212°F/Speed 1 100

Put plenty of water, salt, 1 tsp sugar and 5 g butter into the mixing bowl and bring to the boil for 15 min./100°C/speed 1.

Cook asparagus

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Place the prepared asparagus in the mixing bowl and cook for a further 5 min./100°C/Reverse speed/speed 1. Then drain the asparagus and let it drain well.

Prepare Sauce Hollandaise

Thermomix® Setting
3 min/194°F/Speed 3 90

Put 250 ml water into the mixing bowl. Add 2 bags of Sauce Hollandaise powder and stir for 3 min./90°C/speed 3.

Add butter

Thermomix® Setting
1 min/140°F/Speed 3 60

Add 100 g of cold butter in cubes and stir in for 1 min./60°C/speed 3 until the butter has melted.

Prepare egg-cream mixture

Whisk 200 g whipping cream and 4 eggs (Gr. M) in a separate bowl.

Refine Hollandaise

Thermomix® Setting
30 sec/Speed 2

Slowly add the egg-cream mixture to the Hollandaise in the mixing bowl and stir in for 30 sec./speed 2. Season with pepper and possibly a little salt.

Prepare casserole dish

Grease a casserole dish (2.5-3 liters capacity/ size 20/22-30 cm, height approx. 6 cm).

Layer lasagna

Layer the asparagus alternately with approx. 250 g of sliced cooked ham in the casserole dish. Pour some egg-Hollandaise between the individual layers.

Complete lasagna

Finally, pour the remaining sauce over the lasagna.

Bake lasagna

Bake the lasagna in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: level 3) for approx. 45 minutes.

Garnish and serve

Sprinkle or garnish the finished lasagna with parsley and serve.
