Description

This pumpkin spinach lasagna is a wonderfully warming dish for the colder days. The Hokkaido pumpkin gives the lasagna a slightly sweet note, which harmonizes perfectly with the spicy spinach and the creamy cheese sauce. I especially like to make it in autumn when the pumpkin is in season. The preparation is a bit more complex, but the result is worth it! It can also be prepared well and is therefore ideal for a relaxed dinner with friends or family. An absolute favorite dish that is always well received by us!

Ingredients (14 ingredients)

  • 1 piece Hokkaido
  • 2 piece Onions
  • 2 clove Garlic cloves
  • 1 tbsp Rapeseed oil
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 pinch Cayenne pepper
  • 500 g Sieved tomatoes
  • 500 g Leaf spinach
  • 400 ml Milk
  • 3 tbsp Sauce thickener
  • 150 g Grated cheese
  • 200 g Lasagna sheets
  • 2 Stiel Sage

Preparation (10 steps)

Prepare pumpkin, onions and garlic

Wash, halve the Hokkaido and remove the seeds with a spoon. Cut the pumpkin flesh into approx. 2 cm cubes. Peel and quarter the onions. Peel the garlic cloves.

Chop onions and garlic

Put the onions and garlic into the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push down.

Sauté onions and garlic

Add rapeseed oil and sauté for 3 min./120°C/speed 1.

Sauté pumpkin

Add pumpkin cubes and sauté for 2 min./120°C/speed 1.

Cook pumpkin tomato sauce

Thermomix® Setting
5 min/212°F/Speed 1 100

Season with salt, pepper and cayenne pepper. Add sieved tomatoes and 150 ml water and cook for 5 min./100°C/speed 1.

Blanch spinach

Clean the leaf spinach. Bring salted water to the boil in a saucepan and blanch the spinach in it for 2 minutes. Drain and squeeze out well.

Prepare cheese sauce

Put milk and remaining water (250ml) into the mixing bowl and bring to the boil for 5 min./90°C/speed 2. Season with salt and pepper.

Thicken cheese sauce

Thermomix® Setting

Add sauce thickener and stir in for 1 min./90°C/speed 2.

Melt cheese in the sauce

Thermomix® Setting
1 min/140°F/Speed 2 60

Add 50 g grated cheese and stir in for 1 min./60°C/speed 2 until melted.

Layer and bake lasagna

Cover the bottom of a greased baking dish with lasagna sheets. Alternate layers of pumpkin sauce, spinach, cheese sauce and lasagna sheets. The last layer should be the cheese sauce. Wash the sage, finely chop the leaves and sprinkle over the lasagna together with the remaining cheese. Bake in a preheated oven at 175 °C circulating air for approx. 35 minutes.
