Ingredients (12 ingredients)

  • 1.5 tazas cooked lentils
  • 1 cucharada postre mustard
  • 0.25 cup whole wheat flour
  • 37.5 gramos whole wheat flour
  • 0.25 cucharadita cumin
  • 0.5 cup breadcrumbs
  • 1 piece small carrot
  • 100 gramos cabbage
  • 1 cucharada postre mustard
  • 0.5 cucharada postre vinegar
  • 1 hoja bay leaf
  • 1 pinch baking soda

Soak and Cook the Lentils

Soak 1½ cups of lentils in plenty of water for 12 hours. After that time, change the soaking water and place them in the Thermomix glass. Add 1 bay leaf and 1 pinch of baking soda. Cook for 20 minutes/100°C/Stufe 1 or until they are very tender.

Prepare the Lentil Mixture

Drain the cooked lentils and reserve 1½ cups. In the Thermomix glass, add 1½ cups of cooked lentils, ¼ cup of whole wheat flour (37½ grams), 1 dessert spoon of mustard and ¼ teaspoon of cumin. You can also add garlic powder, oregano and smoked paprika to taste.

Process the Mixture

Process the mixture in the Thermomix for 30 seconds/Stufe 5, then go up to Stufe 8 for 15 seconds until you get a thick, but moist puree. If necessary, use the spatula to lower the remains from the walls of the glass.

Shape the Medallions

Take a portion of the lentil puree and shape it into a medallion with your hands. Moisten your hands to prevent the mixture from sticking.

Bread the Medallions

Place ½ cup of breadcrumbs in a wide container and cover the medallion on both sides with it. Apply slight pressure so that it adheres well.

Brown the Medallions

Brown the legume medallions in an oiled pan over medium heat until toasted on both sides. Remember that all its ingredients are cooked, so we are looking to provide a crunchy effect. Approximately 3-4 minutes per side.

Chop the Cabbage

For the garnish, cut 100 grams of cabbage into pieces and place them in the Thermomix glass. Finely chop for 5 seconds/Stufe 5.

Grate the Carrot

Peel 1 small carrot and cut it into pieces. Place it in the Thermomix glass and grate for 5 seconds/Stufe 5.

Dress the Salad

In a bowl, mix the chopped cabbage and grated carrot. Add 1 dessert spoon of mustard and ½ dessert spoon of vinegar. Mix well to integrate all the ingredients.

Serve

Serve the hot lentil medallions with the coleslaw. You can accompany with baked potatoes or your favorite garnish.
