Description

Preparing the biga at home is an art that I have learned over time, and I must say that the results are always exceptional! This pre-ferment, rich in aromas and flavors, is the ideal base for obtaining soft and fragrant leavened products. Its preparation is very simple and requires very few ingredients: flour, water and fresh yeast. The magic lies in the long leavening, which can last from 18 to 48 hours. I often use it for pizza, but it is also perfect for bread and focaccia. Try it, you won't regret it!

Ingredients (3 ingredients)

  • Type 0 flour
  • Water
  • Fresh brewer's yeast

Preparation of the ingredients

Pour the flour, cold water and crumbled fresh yeast into the bowl.

Knead the ingredients in the bowl for 2 Min./Dough Mode.

Biga leavening

Transfer the dough to a lightly floured work surface and form a loaf. Cover with plastic wrap and let it rise at room temperature for 18-24 hours, or in the refrigerator for 36-48 hours.
