Description

This dish is a real treat! The tender lamb loins with the spicy mustard crust harmonize perfectly with the creamy savoy cabbage vegetables and the aromatic rosemary potatoes. I always make the rosemary potatoes in the oven because they become particularly crispy. The dish is ideal for a festive dinner or a special occasion. The preparation is a bit more complex, but the result is definitely worth it! If you like, you can add some fresh thyme to the savoy cabbage.

Ingredients (12 ingredients)

  • 1 kg Potatoes
  • 2 Zweig Rosemary
  • 7 tbsp Sea salt
  • 0.5 Bd. Parsley
  • 60 g Breadcrumbs
  • 5 tbsp Soft butter
  • 4 tbsp Coarse-grain mustard
  • 1 Zwiebel Onion
  • 200 g Nutmeg
  • 4 piece Lamb loins
  • 300 ml Red wine
  • 4 tbsp Red wine vinegar

Preparation (7 steps)

Prepare and bake potatoes

Wash potatoes well and halve. Wash rosemary, pluck needles and chop roughly. Grease baking tray with 1 tbsp oil. Spread rosemary and 1-2 tbsp sea salt on top. Place potatoes cut side down on the tray. Drizzle 2 tbsp oil over the top. Bake in preheated oven (electric oven: 200 °C/fan oven: 175 °C/gas: see manufacturer) for 40-45 minutes.

Chop parsley and prepare mustard crust

Wash parsley, shake dry and put leaves in the mixing bowl. Chop for 5 sec./speed 5. Add breadcrumbs, parsley, 4 tbsp soft butter and mustard and stir for 20 sec./speed 3. Season with salt and pepper and set aside.

Chop onions

Peel, quarter and place onion in the mixing bowl. Chop for 3 sec./speed 5. Push down with the spatula.

Sauté savoy cabbage

Add 1 tbsp butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and cook savoy cabbage

Thermomix® Setting
10 min/212°F/Linkslauf Speed 1 100 Reverse

Remove outer savoy cabbage leaves. Quarter savoy cabbage, remove stalk and cut into strips. Add savoy cabbage to the onions in the mixing bowl and steam for 10 min./100°C/reverse rotation speed 1. Season with salt, pepper and nutmeg.

Refine savoy cabbage

Add crème fraiche and heat for 2 min./90°C/reverse rotation speed 1.

Prepare sauce

Thermomix® Setting
5 min/Varoma/Speed 1 Varoma

Deglaze roasting juices with red wine and vinegar and add to the mixing bowl. Simmer for 5 min./Varoma/speed 1 without measuring cup.
