Description
Loschik Little Hedgehogs is a festive Russian cake that is easy to prepare with the Thermomix®. The main ingredients are eggs, sugar, flour and condensed milk. The cake is suitable as a sweet dessert and yields about 11 servings. The preparation time is about 60 minutes, of which 45 minutes are active working time. Ideal for special occasions and lovers of Russian baking.

Preparation (10 steps)
Preheat oven
Preheat oven to 200°C top/bottom heat.
Mix eggs
Put 8 eggs in the mixing bowl and mix for 30 sec/speed 3.
Add sugar, vanilla sugar, baking powder and oil
Add 140 g sugar, 2 packets of vanilla sugar, 2 packets of baking powder and 120 g oil and mix for 30 sec/speed 4.
Add flour and mix
Add 320 g flour and mix for 30 sec/speed 5. Push everything down from the edge of the mixing bowl and mix again for 30 sec/speed 5.
Clean mixing bowl
Rinse and dry the mixing bowl.
Bake dough
Divide the dough on two baking trays, spread it out a little and bake one after the other for approx. 10-15 minutes. Let cool.
Cut out circles and process leftovers
Cut out round circles with a glass, put the cut-out leftovers in the mixing bowl and chop for 3 sec/speed 7. If necessary, mix everything with the spatula and chop again for 2 sec/speed 7. Pour into a bowl.
Prepare cream
Put 250 g butter (room temperature) and 1 can of condensed milk in the mixing bowl and mix for 30 sec/speed 4. Push everything down from the edge of the mixing bowl and mix again for 30 sec/speed 4.
Assemble dough circles
Spread two dough circles from one flat side with the cream and stick them together. Now spread the rest and roll in the sprinkles.
Let the little hedgehogs steep
Let the finished little hedgehogs steep overnight.
