Description

This low-carb carrot cake from the Thermomix® is mainly prepared with almonds, hazelnuts, carrots and eggs. It is ideal for a low-carbohydrate diet and is suitable as a nutty dessert or cake for birthdays. Preparation takes about 60 minutes, 20 minutes of which are active working time. The recipe yields 12 servings. Perfect for anyone looking for a healthy and easy cake variation.

Ingredients (12 ingredients)

  • 150 g Almonds
  • 50 g Hazelnuts
  • 300 g Carrots
  • 4 Stück Eggs
  • 100 ml Oil
  • 100 g Sweetener
  • 1 Pck. Baking powder
  • 1 TL Cinnamon
  • 0.5 TL Nutmeg
  • 200 g Cream cheese
  • 50 g Sweetener
  • 1 EL Lemon juice

Preparation (7 steps)

Grind almonds and hazelnuts

Place almonds and hazelnuts in the mixing bowl and grind for 15 sec/speed 10. Transfer.

Chop carrots

Thermomix® Setting
5 sec/Speed 5

Place carrots in pieces in the mixing bowl and chop for 5 sec/speed 5. Transfer.

Stir eggs, oil and sweetener

30 sec/Speed 4

Place eggs, oil and sweetener in the mixing bowl and stir for 30 sec/speed 4.

Mix and add dry ingredients

Add ground almonds and hazelnuts, chopped carrots, baking powder and spices and stir for 30 sec/speed 3.

Bake batter

Pour the batter into a greased cake tin and bake in a preheated oven at 175°C top/bottom heat for approx. 40 minutes.

Prepare cream cheese frosting

Thermomix® Setting
20 sec/Speed 3

For the frosting, put cream cheese, sweetener and lemon juice in the mixing bowl and stir for 20 sec/speed 3.

Decorate cake

Spread the frosting on the cooled cake and decorate as desired.
