Description

This low carb cauliflower rice pudding is a healthy and sugar-free alternative to classic rice pudding. The recipe is vegan, gluten-free, and lactose-free. With a preparation time of only 15 minutes, it is ideal for a quick breakfast or dessert. The portion size is designed for 2 people and is perfect for a light and low-calorie meal.

Ingredients (7 ingredients)

  • 300 g Cauliflower
  • 250 g Coconut milk
  • 1 TL Cinnamon
  • 1 Msp. Vanilla bean pulp
  • 2 TL Flaxseed flour
  • 1 EL Date paste
  • 1 EL Honey/Rice syrup

Preparation (3 steps)

Chop the cauliflower

Place 300g of cauliflower into the mixing bowl and chop for 5 sec./speed 5, repeat if necessary. The cauliflower should now be the size of rice grains.

Cook the rice pudding

Add 250g coconut milk (shake the can well beforehand), 1 tsp cinnamon, 1 pinch of vanilla bean pulp, and 2 tsp flaxseed flour and cook for 10 min./100°C/Reverse Blade speed 2.

Serve warm or cold with 1 tbsp date paste or an alternative sweetener.
