Description

This recipe for stuffed bologna sausage with spicy onion sauce and mashed potatoes is a hearty main course prepared with the Thermomix®. Preparation takes about an hour and yields four servings.   • 1 EL Mustard
  • 4 Scheiben Cheese
  • 4 Scheiben Pickled cucumbers
  • 1000 g Potatoes
  • 100 ml Milk
  • 20 g Butter
  • 1 TL Salt
  • 1 Prise Nutmeg
  • 250 g Onions
  • 40 g Oil
  • 1 EL Tomato paste
  • 1 EL Flour
  • 100 ml Water
  • 100 ml White wine
  • 1 EL Mustard
  • 1 TL Sugar
  • 1 TL Salt
  • 1 Prise Pepper
  • 1 Prise Paprika powder
  • 50 ml Cream
  • 1 Etwas Oil for frying

Preparation (13 steps)

Prepare potatoes

Peel 1 kg potatoes, quarter and place in the steaming basket.

Pour in water and cook potatoes

Put 1 liter of water into the mixing bowl, insert the steaming basket and cook for 25 min./Varoma/speed 1.

Process potatoes into puree

After the cooking time, remove the steaming basket and empty the water from the mixing bowl. Add the cooked potatoes together with 100 ml milk, 20 g butter, salt and nutmeg to the mixing bowl and process into a puree for 20 sec./speed 4.

Keep puree warm

Transfer the mashed potatoes and keep warm.

Chop onions

Put 250 g onions into the mixing bowl and chop for 3 sec./speed 5.

Sauté onions

Add 40 g oil to the chopped onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare sauce

Add 1 tbsp tomato paste, 1 tbsp flour, 100 ml water, 100 ml white wine, 1 tbsp mustard, 1 tsp sugar, 1 tsp salt, pepper and paprika powder to the onions in the mixing bowl and cook for 10 min./100°C/speed 2.

Refine sauce

Add 50 ml cream to the mixing bowl and stir in for 2 min./90°C/speed 2.

Prepare bologna sausage

Spread mustard on one side of 4 slices of bologna sausage and top with 1 slice of cheese and 1 slice of pickled cucumber each.

Fill bologna sausage

Fold the bologna sausage slices together and fix with roulade needles or toothpicks.

Fry bologna sausage

Fry the filled bologna sausage slices in a separate pan with a little oil until golden brown on both sides.

Add bologna sausage to sauce

Add the fried bologna sausage slices to the sauce in the mixing bowl and let it steep for 5 min./90°C/reverse rotation speed 1.
