Description

This hearty pearl barley soup with beef, prepared in the Thermomix®, warms you up on cold days. The main ingredients are soup beef, pearl barley, potatoes and soup vegetables. The preparation time is 125 minutes for 6 servings. Ideal as a hearty main course and family meal.

Ingredients (12 ingredients)

  • 500 g Soup beef from beef
  • 250 g Pearl barley
  • 250 g Potatoes
  • 1 Bund Soup vegetables
  • 120 g Belly bacon, smoked
  • 200 g Onions
  • 6 Peppercorns
  • 3 Cloves
  • 2 Bay leaves
  • 1 EL Salt
  • 1 EL Vegetable oil
  • 15 g Parsley, curly

Preparation (11 steps)

Prepare meat

Wash 500 g soup beef from beef and pat dry. Peel and halve 120 g onions.

Prepare meat broth

Put the prepared soup beef, the halved onions, 6 peppercorns, 3 cloves, 2 bay leaves and 1 tbsp salt into the mixing bowl. Add 2 liters of cold water and cook for 60 min./100°C/level 1.

Prepare soup vegetables

While the broth is cooking, clean and prepare the soup vegetables. Cut carrots into small cubes. Wash leek and cut into thin slices. Peel celeriac and cut into small cubes. Wash 15 g parsley.

Add vegetables to the broth

Add half of the prepared vegetables to the mixing bowl and cook for another 30 min./100°C/level 1.

Prepare pearl barley, onions, bacon and potatoes

In the meantime, wash 250 g pearl barley in a sieve under running water and drain. Dice 60 g onions and 120 g smoked belly bacon. Wash, peel and cut 250 g potatoes into 1 cm cubes.

Remove meat and strain broth

After the cooking time, remove the meat from the mixing bowl with a fork and set aside. Pour the broth through a sieve into a bowl. The cooked vegetables are no longer used.

Sauté bacon and onions

Put 1 tbsp vegetable oil in the mixing bowl. Add the diced onions and bacon and sauté for 3 min./120°C/level 1.

Sauté vegetables and pearl barley

Add the remaining vegetables, the potato cubes and the drained pearl barley to the mixing bowl and sauté for 3 min./120°C/level 1.

Cook soup

30 min/212°F/Speed 1 100

Pour the strained broth into the mixing bowl and let it cook for 30 min./100°C/level 1 with the lid on.

Prepare meat and chop parsley

While the soup is cooking, remove the soup beef from bones and tendons and cut into small cubes. Finely chop the parsley.

Refine and serve soup

5 min/176°F/Linkslauf Speed 1 80 Reverse

Add the diced soup beef and the chopped parsley to the mixing bowl and heat for 5 min./80°C/reverse rotation level 1. Season with salt and pepper and serve hot.
