Description

This tartar sauce is a true treasure of homemade cuisine! I often prepare it to accompany croutons or to enrich my favorite dishes. The combination of hard-boiled and raw egg yolks creates a creamy texture and a rich flavor, while the gherkins, capers, and parsley add a touch of freshness and acidity that makes it irresistible. Ingredients (8 ingredients)

  • 4 piece hard-boiled eggs _only the yolks_
  • 2 piece yolks _raw_
  • 1 tbsp white vinegar
  • 200 ml seed oil
  • 3 piece pickled gherkins
  • 1 tbsp capers
  • 1 ciuffo parsley
  • fine salt

Preparation (6 steps)

Hard-boiled egg yolks in the bowl

Put the 4 hard-boiled egg yolks into the Thermomix bowl.

Addition of salt and vinegar

Add a pinch of fine salt and 1 tablespoon of white vinegar into the Thermomix bowl.

Blend the hard-boiled egg yolks

Blend the hard-boiled egg yolks, salt and vinegar for 10 seconds at speed 5.

Addition of the raw egg yolks

Add the 2 raw egg yolks into the Thermomix bowl.

Emulsify with the oil

Thermomix® Setting
2 min/keine/Speed 4

With the Thermomix running at speed 4, pour the seed oil in a thin stream into the bowl. Continue until the sauce has emulsified and has reached the desired consistency. It will take about 2 minutes.

Addition of the chopped ingredients

Transfer the mayonnaise to a bowl. Finely chop 3 pickled gherkins, 1 tablespoon of capers and 1 sprig of parsley. Add the chopped ingredients to the mayonnaise and mix well.
