  • 0.5 cup margarine, melted
  • 2 tablespoons white sugar
  • 1 pinch ground cinnamon
  • 2 packet cream cheese, softened (8 ounce)
  • 1 packet cream cheese, softened (3 ounce)
  • 1 cup white sugar
  • 2 tablespoons lemon juice
  • 4 piece eggs
  • 1 pint sour cream
  • 2 tablespoons white sugar
  • 1 teaspoon vanilla extract

Crush Vanilla Wafers

Place 7 ounces of vanilla wafers into the Thermomix bowl and crush for 10 Sec./Stufe 8. Ensure the wafers are finely crushed.

Prepare the Crust Mixture

Add ½ cup of melted margarine, 2 tablespoons of white sugar, and 1 pinch of ground cinnamon to the crushed vanilla wafers in the Thermomix bowl. Mix for 15 Sek./Stufe 3 until well combined.

Press Crust into Baking Dish

Press the mixture into the bottom of a 9x13-inch baking dish. Ensure the crust is evenly distributed and firmly packed.

Bake the Crust

Bake the crust in a preheated oven at 375 degrees F (190 degrees C) until lightly browned, about 10 minutes. Remove from oven and let cool slightly.

Prepare Cream Cheese Filling

Place the two 8-ounce packages and 3-ounce package of softened cream cheese, 1 cup of white sugar, and 2 tablespoons of lemon juice into the Thermomix bowl. Mix for 30 Sek./Stufe 4 until smooth.

Add Eggs to Filling

Add the eggs, one at a time, to the cream cheese mixture in the Thermomix bowl, mixing for 10 Sek./Stufe 3 after each addition. Ensure each egg is fully incorporated.

Pour Filling over Crust

Pour the cream cheese filling over the baked crust in the baking dish. Spread evenly.

Bake Cheesecake

Bake in the preheated oven until the middle of the cheesecake is set, about 25 to 30 minutes. Cool for 10 minutes.

Prepare Sour Cream Topping

Place the sour cream, 2 tablespoons of white sugar, and 1 teaspoon of vanilla extract into the Thermomix bowl. Mix for 15 Sek./Stufe 3 until creamy.

Add Topping and Bake

Pour the sour cream topping over the cheesecake. Bake until the topping is set, about 5 minutes.

Cool and Refrigerate

Cool the cheesecake to room temperature and then refrigerate until serving. This allows the flavors to meld and the cheesecake to set completely.
