Description

These Nancy macaroons, a classic of French confectionery, are incredibly simple to make with the Thermomix®. Almond powder, combined with icing sugar and a touch of bitter almond extract, creates a delicate and addictive flavor. I love preparing these little cakes to accompany a gourmet coffee or to offer as a gift. The dough is quick to prepare and the cooking only takes a few minutes. A real treat for almond lovers!

Ingredients (6 ingredients)

  • to taste Vanilla sugar
  • 1 tsp Bitter almond extract
  • 50 g Caster sugar or granulated sugar
  • 180 g Icing sugar
  • 2 piece Egg whites
  • 175 g Almond powder

Preparation of almonds and icing sugar

Put 175 g of almond powder and 180 g of icing sugar in the Thermomix bowl and mix for 10 Sek./Stufe 10 to make sure there are no lumps.

Mixing the ingredients

20 sec/Speed 4

Add 50 g of caster sugar or granulated sugar and half of the egg whites (approximately 1 egg white) into the Thermomix bowl. Mix for 20 Sek./Stufe 4.

Adding the vanilla and the rest of the egg whites

Thermomix® Setting
30 sec/Speed 3

Add 1 tsp of bitter almond extract and the rest of the egg whites (approximately 1 egg white) into the Thermomix bowl. Mix gradually for 30 Sek./Stufe 3, increasing the speed if necessary, until a soft but non-runny dough is obtained.

Plating and baking

Preheat the oven to 160°C. Place the macaroons on a baking sheet lined with baking paper. Flatten slightly and smooth the surface of the macaroons by moistening them with water. Bake in the oven for 10 to 15 minutes.
