Description

These redcurrant muffins are an absolute summer treat! I bake them every year when the redcurrants in the garden are ripe. The combination of the slightly tart aroma of the berries and the sweet, loose dough is simply irresistible. They are perfect for a cozy brunch on the weekend or as a sweet treat for afternoon coffee. The preparation is super easy and quick with the Thermomix®. A great recipe that is always well received by young and old!

Ingredients (10 ingredients)

  • 300 g Redcurrants (red)
  • 125 g Butter (room temperature)
  • 2 piece Eggs (size M)
  • 150 g Sugar
  • 1 Pck. Bourbon Vanilla sugar
  • 3 tbsp Milk (whole milk)
  • 225 g Flour (Type 405)
  • 2 tsp Baking powder
  • 1 pinch Salt
  • 3 tbsp Powdered sugar

Preparation (9 steps)

Preheat oven and prepare muffin cups

Preheat the oven to 180 °C top and bottom heat. Place paper liners in a muffin tin.

Prepare redcurrants

Pluck 300 g redcurrants from the stem, wash and drain well.

Whisk butter, sugar and eggs until foamy

Place 125 g butter (room temperature), 2 eggs (size M), 150 g sugar and 1 pack. Bourbon vanilla sugar in the mixing bowl and whisk for 2 min./speed 4 until foamy.

Add flour mixture

20 sec/keine/Speed 3

Add 225 g flour (Type 405), 2 tsp baking powder and 1 pinch of salt to the mixing bowl and stir in for 20 sec./speed 3.

Stir in milk

Thermomix® Setting
10 sec/keine/Speed 2

Add 3 tbsp milk (whole milk) to the mixing bowl and stir in for 10 sec./speed 2.

Fold in redcurrants

Carefully fold about two thirds of the redcurrants into the dough with a spatula.

Fill dough into cups and top with redcurrants

Spread the dough evenly on the muffin cups. Then spread the remaining redcurrants on the muffins and press lightly.

Bake muffins

Bake the muffins in the preheated oven for about 25-30 minutes. Use a wooden skewer to check if the dough is baked through.

Let muffins cool and dust with powdered sugar

Let the muffins cool before serving and then dust with 3 tbsp powdered sugar.
