Description

These vanilla carrot muffins from the Thermomix® are a delicious dessert or cake for special occasions. The main ingredients are carrots, flour, eggs, sugar and vanilla yogurt. Preparation with the Thermomix® takes about 50 minutes and yields 12 servings. Ideal for family celebrations, birthdays or simply as a sweet treat with coffee. The recipe is easy to implement and is guaranteed to succeed.

Ingredients (10 ingredients)

  • 100 g Butter
  • 200 g Carrots
  • 250 g Flour
  • 2 TL Baking powder
  • 0.25 TL Salt
  • 2 Stück Eggs
  • 100 g Sugar
  • 250 g Vanilla yogurt
  • 30 g Chopped almonds
  • 12 Stück Paper liners

Preparation (7 steps)

Prepare carrots

Peel and finely grate carrots. Set aside.

Make flour mixture

Put flour, baking powder and salt in the mixing bowl and mix.

Melt butter

Put butter in the mixing bowl and melt.

Stir in eggs, sugar and yogurt

Add eggs and sugar to the melted butter in the mixing bowl and stir. Add vanilla yogurt and stir.

Stir in flour mixture

Quickly add the flour mixture to the egg-butter mixture in the mixing bowl and stir in briefly.

Fold in grated carrots

Add grated carrots to the dough in the mixing bowl and carefully fold in with the spatula.

Bake muffins

Fill the dough into the paper liners and sprinkle with chopped almonds. Bake in a preheated oven at 170°C (convection, center) for about 30 minutes.
