Description

This hearty dark beer goulash is a savory main course prepared with the Thermomix®. The recipe combines pork goulash with carrots and potatoes, steamed in the Varoma. The preparation time is about 48 minutes and the dish is designed for 4 servings. Ideal for a hearty lunch or dinner.

Ingredients (14 ingredients)

  • 100 g red onions, peeled, quartered
  • 20 g sunflower oil
  • 600 g pork goulash, 2 x 3 cm pieces
  • 40 g vegetable base paste
  • 10 g tomato paste
  • pepper
  • 500 ml dark beer (non-alcoholic)
  • 1 MB water or vegetable broth
  • 500 g potatoes, peeled, halved or quartered (depending on size)
  • 250 g carrots, peeled, sliced
  • salt
  • 2 EL lemon juice
  • 1 EL cornstarch (optional)
  • 1 EL fresh chives, chopped

Preparation (9 steps)

Chop onions

Place 100 g red onions, peeled and quartered, in the mixing bowl and chop for 4 sec/speed 5. Use the spatula to scrape down the sides.

Sauté onions

Add 20 g sunflower oil and sauté for 3 min/120°C/speed 1 without the measuring cup.

Sear goulash

Thermomix® Setting
5 min/248°F/Linkslauf/Speed 1 248°F Reverse

Add 600 g pork goulash (2x3 cm pieces), 40 g vegetable base paste, 10 g tomato paste and pepper and sear for 5 min/120°C/Reverse/speed 1 without the measuring cup.

Pour in the dark beer and simmer

Pour in 500 ml dark beer (non-alcoholic) and 1 MC water or vegetable broth. Put the lid on.

Prepare and cook the vegetables

Place 500 g potatoes, peeled and halved or quartered (depending on size), in the Varoma. Cut 250 g carrots, peeled and sliced, directly into the Varoma with the Wundermix WunderSlicer V2 (fine slice). Lightly salt and pepper the potatoes and carrots. Attach the Varoma and cook for 38 min/Varoma/Reverse/speed 0.5.

Remove Varoma

Remove the Varoma and place on a plate.

Thicken the sauce

1 min/Varoma/Linkslauf/Speed 1 Varoma Reverse

Mix 2 tbsp lemon juice with 1 tbsp cornstarch and add to the meat. Bring to a boil for 1 min/Varoma/Reverse/speed 1 without the measuring cup.

Seasoning

Season with salt and pepper.

Serve

Place the goulash with the vegetables on plates and serve sprinkled with 1 tbsp fresh chives, chopped.
