Description

Delicious roasted almonds, perfect for Christmas time!

Ingredients (5 ingredients)

  • 120 g Sugar
  • 100 ml Water
  • 1 Pck. Vanilla sugar
  • 1 TL Cinnamon
  • 200 g Almonds

Preparation (6 steps)

Prepare sugar mixture

Place 120 g sugar, 1 packet vanilla sugar and 1 tsp cinnamon into the mixing bowl.

Mix sugar mixture

Mix the dry ingredients for 5 sec/speed 3.

Add water and bring to the boil

Add 100 ml water and bring to the boil for 5 min/100°C/speed 2 until the sugar has completely dissolved. Leave the measuring cup on.

Add almonds and let the water evaporate

10-15 min/Varoma/Linkslauf/Gentle stir speed Varoma Reverse

Add 200 g almonds and simmer for 10-15 min/Varoma/Reverse/Soft stirring level until the water has evaporated and a matte sugar layer forms. Remove the measuring cup.

Caramelize almonds

5-8 min/Varoma/Linkslauf/Gentle stir speed Varoma Reverse

Continue stirring for another 5-8 min/Varoma/Reverse/Soft stirring level until the almonds are shiny. Remove the measuring cup. In between, use the spatula to push the almonds down from the edge.

Let the almonds cool

Place the almonds on a piece of baking paper and separate them from each other with a spoon.
