Description

These marinated grilled chicken thighs are a flavorful and easy main course, perfect for a summer barbecue or a quick weeknight dinner. The yogurt-based marinade, infused with aromatic spices, tenderizes the chicken and creates a delicious crust when grilled. I've been making this recipe for years, and it's always a hit! The chicken is juicy and packed with flavor, thanks to the marinade. It's also great for meal prepping – just marinate the chicken ahead of time and grill it when you're ready to eat. Serve with a side of rice or a fresh salad for a complete meal.

Ingredients (6 ingredients)

  • 0.5 piece lime, juiced
  • 1.5 tbsp plain yogurt
  • 1.5 tbsp tandoori masala powder
  • salt
  • freshly ground black pepper
  • 2 pounds boneless, skinless chicken thighs

Prepare the Marinade

Juice ½ lime directly into the mixing bowl. Add 1 ½ tablespoons of plain yogurt, 1 ½ tablespoons of tandoori masala powder, salt, and freshly ground black pepper to taste. Mix well to combine.

Marinate the Chicken

Pour the marinade mixture into a resealable plastic bag. Add 2 pounds of boneless, skinless chicken thighs, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 2 hours.

Preheat Grill and Prepare Chicken

Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove chicken from the bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels.

Grill the Chicken

Grill chicken on the preheated grill with the lid open for 2 minutes. Close lid and continue to grill chicken for 6 minutes.

Continue Grilling

Turn chicken, close lid and grill until well-browned and meat is no longer pink in the center, about 6 minutes. An instant-read thermometer inserted into the thickest part of the thigh should read 180 degrees F (82 degrees C).
