Description

This marinated mini mozzarella is an absolute hit at any party or as a delicious appetizer for grilling! I have been making it for years and it is always a hit. The small mozzarella balls are marinated overnight in an aromatic marinade of garlic, lemon, oil and pepper. This allows them to absorb the flavor wonderfully and become incredibly juicy. Served with crispy ciabatta, olives and dried tomatoes, it is a Mediterranean treat that is easy to prepare and perfect for summer. A vegetarian highlight that you should definitely try!

Ingredients (8 ingredients)

  • 250 g Mini Mozzarella
  • 2 clove Garlic
  • 1 piece Organic Lemon
  • 250 ml Sunflower Oil
  • 15 g Pepper
  • 1 piece Ciabatta
  • 1 Glas Kalamata Olives
  • 1 Glas Dried Tomatoes

Preparation (5 steps)

Chop garlic

Thermomix® Setting

Peel 2 cloves of garlic, place in the mixing bowl and chop for 3 sec./speed 7. Scrape down the sides with the spatula.

Grate lemon zest

Wash 1 organic lemon in hot water, dry and grate the peel with a fine grater. Set aside 1 tsp of lemon zest.

Prepare marinade

Thermomix® Setting
10 sec/Speed 3

Add 250 ml sunflower oil, 1 tsp grated lemon zest and 15 g pepper to the mixing bowl and mix for 10 sec./speed 3.

Marinate mozzarella

Pat 250 g mini mozzarella dry well and layer in a clean container together with the marinade, the chopped garlic, the olives and the dried tomatoes. Close and leave to infuse in the refrigerator overnight (at least 8 hours).

Serve

Serve the marinated mozzarella with ciabatta.
