Description

This Moroccan Semolina Flatbread, or Ksra, is a delightful addition to any meal. I've been making this recipe for years, and it always brings a touch of North African warmth to my table. The combination of bread flour and semolina creates a slightly chewy texture with a subtle nutty flavor. The anise seed adds a hint of licorice, making it a unique and flavorful bread. Perfect for dipping in olive oil or serving alongside tagines, this flatbread is best enjoyed warm. Feel free to add sesame seeds for a nutty crunch. It's a simple yet satisfying bread that's sure to impress!

Ingredients (9 ingredients)

  • 0.875 cup water
  • 2.25 cups bread flour
  • 0.75 cup semolina flour
  • 1 tsp anise seed
  • 1.5 tsp salt
  • 0.5 tsp white sugar
  • 2 tsp active dry yeast
  • 1 tbsp olive oil
  • 1 tbsp sesame seeds

Combine ingredients in Thermomix

Add ⅞ cup water, 2 ¼ cups bread flour, ¾ cup semolina flour, 1 teaspoon anise seed, 1 ½ teaspoons salt, ½ teaspoon white sugar, and 2 teaspoons active dry yeast to the Thermomix bowl. Set to knead mode for 2 minutes.

Remove and shape the dough

Remove the dough from the Thermomix bowl. Punch down the dough. Divide the dough into two halves and shape each half into a ball. Flatten the balls to a ¾ inch thickness.

Let the dough rise

Place the flattened dough on a lightly floured baking sheet. Cover with towels and let rise until double in size, about 30 minutes.

Preheat oven and prepare dough

Preheat the oven to 400 degrees F (200 degrees C). Brush the top of each loaf with 1 tablespoon olive oil and sprinkle with 1 tablespoon sesame seeds (optional). Prick the tops of the loaves all over using a fork.

Bake the flatbread

Bake for 20 to 25 minutes in the preheated oven, or until the loaves are golden and sound hollow when tapped.
