Hearty homemade spaetzle, perfect as a main course or side dish.

Ingredients (6 ingredients)

  • 300 g Flour
  • 0.5 tsp Salt
  • 0.2 l Water
  • 3 piece Eggs
  • 30 g Butter
  • 2 piece Onions

Chop onions

Add onions to the mixing bowl and chop for 3 sec./level 5.

Sauté onions

Add butter to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Prepare spaetzle dough

Thermomix® Setting

Add flour, salt, water and eggs to the mixing bowl and process for 2 min./kneading level to form a dough.

Process dough

Push the dough in portions through a spaetzle plane or spaetzle cutter into boiling salt water, paying attention to a few centimeters stand from the cooking water. For scraping, dip the small boards in water, scrape thin strips in portions into boiling salt water with a wide knife.

Cook spaetzle

Bring the spaetzle to a boil quickly a few times in an open pot until they float to the surface; cooking for too long makes the spaetzle sticky. Cooking time depending on the size and amount of spaetzle 2-3 minutes.

Drain spaetzle

Remove cooked spaetzle with a slotted spoon, rinse with cold or hot water depending on further processing, drain very well, possibly spread out on a board and let dry. Spaetzle can be prepared several hours before use or the day before.

Finish spaetzle

Toss well-dried spaetzle in hot butter and let them get hot or arrange with hot rinsed onion rings. After draining, arrange spaetzle with roasted breadcrumbs or onion rings.
