Description

These stuffed cabbage roll swirls are a hearty and filling dish that tastes particularly good in the cold season. The combination of spicy sauerkraut, bacon and apple, encased in a homemade pasta dough, makes this dish a true culinary delight. I always make these cabbage roll swirls when I want to cook something hearty and savory. They are a bit more complex to prepare, but the effort is definitely worth it! The swirls can also be prepared well in advance and stored in the refrigerator before baking. Perfect for a cozy family meal or a special occasion.

Ingredients (16 ingredients)

  • 300 g Flour
  • 3 piece Eggs (size M)
  • 1 tbsp Olive oil
  • 1 pinch Salt
  • 75 g Onion
  • 50 g Pork lard
  • 750 g Sauerkraut
  • 0.25 l White wine
  • 150 g Apple
  • 100 g Smoked, streaky bacon
  • 5 piece Juniper berries
  • to taste Salt
  • to taste Pepper
  • to taste Sugar
  • 1 bunch Parsley
  • to taste Flour for the work surface

Preparation (11 steps)

Prepare pasta dough

Thermomix® Setting
2 min/Kneading speed

Put 300 g flour, 3 eggs, 1 tbsp olive oil and 1 pinch of salt into the mixing bowl and knead for 2 min./kneading setting to form a smooth dough.

Let dough rest

Remove the pasta dough from the mixing bowl, shape into a ball, wrap in cling film and leave to rest for 60 minutes.

Chop onions

Peel and quarter 75 g onions and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 50 g pork lard to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add sauerkraut and wine

Thermomix® Setting
45 min/212°F/Linkslauf Speed 1 100 Reverse

Add 750 g sauerkraut to the mixing bowl and add ¼ l white wine. Simmer for 45 min./100°C/reverse rotation speed 1.

Add apple and bacon

10 min/212°F/Linkslauf Speed 1 100 Reverse

Wash, quarter, core and dice 150 g apple and add to the mixing bowl together with 100 g diced, smoked, streaky bacon and 5 juniper berries. Simmer for a further 10 min./100°C/reverse rotation speed 1.

Season and let cool

Season the sauerkraut mixture with salt, pepper and sugar and then allow to cool completely.

Chop parsley

Wash 1 bunch of parsley, shake dry, pluck the leaves and place in the mixing bowl. Chop for 3 sec./speed 8.

Roll out and cover dough

Roll out the pasta dough on a floured work surface to a sheet of approx. 30-40 cm. Spread the cooled sauerkraut mixture evenly over the dough sheet. Sprinkle the chopped parsley over the top.

Form and cut swirls

Roll up the dough sheet with the sauerkraut mixture and cut into rolls approx. 5 cm wide.

Bake cabbage swirls

Place the rolls upright next to each other in an ovenproof dish and pour in salted water halfway up. Bake covered in a preheated oven (electric oven: 200 °C / gas: level 4) for approx. 45 minutes.
