Description

This dish of Iberian pork medallions in sauce is a real treat for lovers of good food. The meat, juicy and tender, combines perfectly with a rich and tasty sauce, made with fresh vegetables and a touch of white wine. It is an ideal dish for a special meal or a festive dinner. I usually prepare it in autumn, when carrots are at their best. A dish that always triumphs at home! Furthermore, it is quite simple to prepare with the Thermomix®, which makes it a perfect option for those looking for a tasty and easy-to-make dish.

Ingredients (10 ingredients)

  • 2 piece Iberian pork sirloin (approx. 350 gr each)
  • 1 piece onion
  • 1 piece carrot
  • 1 clove garlic
  • 400 ml broth
  • 100 ml white wine
  • 1 pinch salt
  • 1 pinch ground white pepper
  • 1 pinch olive oil
  • 1 cucharadita cornstarch

Ingredient preparation

Gather all the necessary ingredients for the recipe.

Prepare vegetables

Peel 1 onion and cut it into julienne strips. Peel 1-2 carrots and cut them into thin slices. Peel 1 clove of garlic and cut it into slices. Clean the pork sirloins.

Cut and flatten the sirloin

Cut the sirloins into medallions and flatten them a little with your hand.

Sauté the onion, garlic and carrot

10 min/248°F/Giro a la izquierda/Velocidad Cuchara 120 Reverse

Place the julienned onion, sliced garlic and thinly sliced carrots in the bowl. Add salt and 30 ml of olive oil. Program 10 Min./120°C/Left turn/Spoon Speed.

Add cornstarch

Add 1 teaspoon of cornstarch to the bowl and mix 5 Sec./Speed 3.

Incorporate white wine and broth

Thermomix® Setting
15 min/212°F/Velocidad 1 100

Pour 100 ml of white wine into the bowl and program 2 Min./Varoma/Speed 1, without the measuring cup, to evaporate the alcohol. Then, add 400 ml of hot broth and 1/4 teaspoon of ground white pepper. Mix well and program 15 Min./100°C/Speed 1.

Blend the sauce

30 Seg./Velocidad 10

Pour the sauce into a separate container. Clean the Thermomix bowl. Pour the sauce back into the bowl and blend 30 Sec./Speed 10.

Cook the medallions in the sauce

Thermomix® Setting
7 min/212°F/Giro a la izquierda/Velocidad Cuchara 100 Reverse

Pour the blended sauce back into the bowl. Add the sirloin medallions and the juice they have released on the plate. Season with salt to taste. Program 7 Min./100°C/Left turn/Spoon Speed.
