Description

This seafood soup is a comforting and flavorful dish, perfect to enjoy on cold days or special celebrations. The recipe, inspired by Mediterranean cuisine, combines prawns, clams, mussels and white fish in an aromatic and substantial broth. Mint gives it a fresh and distinctive touch. Preparing it in the Thermomix® greatly facilitates the process, allowing you to obtain a delicious and consistent result. Go ahead and try it and surprise your guests with this delight from the sea! You can add croutons and boiled egg to complete the dish.

Ingredients (16 ingredients)

  • 300 gr prawns
  • 300 gr clams
  • 500 gr mussels
  • 1 slice dogfish
  • 1 piece onion
  • 5 clove garlic
  • 1 piece Italian green pepper
  • 2 piece large ripe tomatoes
  • 1 tbsp sweet paprika
  • 1 tbsp ground black pepper
  • 1 container fine wine
  • 2 hoja bay leaf
  • 1 rama mint
  • 2 tbsp potato flakes
  • to taste salt
  • to taste oil

Preparation (11 steps)

Initial cooking of fish and shellfish

In a large pot, put 2 liters of water with bay leaf and salt. When it starts to boil, add the slice of fish, mussels and clams. Cook until the shells open.

Reserve fish and shellfish

Remove the fish and shellfish from the pot and reserve in a source. Peel the prawns and reserve the shells and heads. Strain the broth and reserve.

Prepare prawn oil

Put a good splash of oil in a pan, add 3 cloves of chopped garlic and fry the shells and heads of the prawns. Crush the heads. Add paprika and wine. Once fried, strain and add the prawn oil to the reserved broth.

Chop onion, garlic and pepper

Put the onion, 2 cloves of garlic and the Italian green pepper in the Thermomix glass. Chop 3 Sec./Speed 5.

Sauté the vegetables

Add oil to the Thermomix glass. Sauté the onion, garlic and pepper 5 Min./120°C/Speed 1.

Add tomato and spices

Add the chopped large ripe tomatoes, sweet paprika and ground black pepper to the Thermomix glass. Cook 10 Min./100°C/Speed 1.

Crush the sauce

Incorporate the sauce into the broth

Pour the crushed sauce into the pot with the reserved broth.

Add fish and shellfish

Remove the clams and mussels from their shells and add all the fish and shellfish to the pot. Incorporate a sprig of mint.

Cook the soup

Thicken the soup (optional)
