Description

A light and delicious Mediterranean salmon casserole.

Ingredients (13 ingredients)

  • 500 g Salmon fillet without skin
  • 1 Stück Zucchini
  • 2 Stück red Onions
  • 200 g Mushrooms
  • 2 Stück Bell peppers
  • 200 g Cherry tomatoes
  • 150 g Feta
  • 5 EL Olive oil
  • 2 Zehen Garlic
  • 1 EL Oregano
  • 1 Prise Salt
  • 1 Prise Pepper
  • 1 Prise Chili

Preparation (5 steps)

Prepare vegetables

Halve Onions and put into the mixing bowl. Chop 3 sec./level 5. Transfer. Halve Zucchini lengthwise and cut into slices. Halve Mushrooms. Cut Bell pepper into strips. Halve Cherry tomatoes. Crumble Feta.

Prepare marinade

Thermomix® Setting

Put Garlic in the mixing bowl and chop 3 sec./level 7. Add Olive oil, Oregano, Salt, Pepper and Chili and stir 10 sec./level 3.

Mix vegetables

Add half of the marinade to the prepared Onions, Zucchini, Mushrooms, Bell pepper, Tomatoes and Feta and mix. Put in a casserole dish.

Pre-cook vegetables

Bake the casserole dish with the vegetables in the preheated oven at 180°C top/bottom heat for 10 minutes.

Prepare and bake Salmon

Wash Salmon fillets, pat dry and brush with the remaining marinade. Place over the vegetables in the casserole dish and bake for another 20 minutes in the oven.
