Description

This autumnal vegetable mix with pumpkin seed dressing is a vegetarian salad recipe for the Thermomix® with parsnips, beetroot, carrots, shallots and Hokkaido pumpkin. In just 35 minutes, a healthy meal for 4 people is created. Ideal as a light starter or a filling main course, suitable for the autumn and winter season. The recipe is particularly suitable for a balanced diet.

Ingredients (11 ingredients)

  • 4 Stück Parsnips
  • 4 Stück Beetroot
  • 4 Stück Carrots
  • 2 Stück Shallots
  • 0.5 Stück Hokkaido pumpkin
  • 4 EL Native rapeseed oil
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 2 EL Pumpkin seed oil
  • 2 EL Apple vinegar
  • 1 EL Flower honey

Preparation (6 steps)

Prepare vegetables

Preheat oven to 200 degrees top and bottom heat. Peel parsnips, beetroot, carrots and shallots. Cut parsnips and carrots diagonally into pieces. Cut beetroot and shallots into wedges. Wash pumpkin well, remove seeds and dice flesh.

Mix vegetables

Place the prepared vegetables on a baking sheet lined with baking paper. Add 4 tablespoons of rapeseed oil, salt and pepper and mix everything well.

Roast vegetables

Roast the vegetables in the preheated oven for about 20 minutes, turning occasionally.

Prepare dressing

Add 2 tablespoons of pumpkin seed oil, 1 tablespoon of rapeseed oil, 2 tablespoons of apple vinegar, 1 tablespoon of flower honey (or agave syrup), salt and pepper to the mixing bowl and mix for 10 sec/level 3.

Mix vegetables and dressing

After the cooking time, remove the roasted vegetables from the oven and mix with the prepared dressing on the baking sheet.

Arrange salad

Arrange the salad and drizzle with the remaining dressing.
