Description

This dish of stuffed aubergines is a real concentrate of summer flavors. Grilled vegetables, full of sunshine, go perfectly with the smoothness of the aubergine and the fruity taste of Comté. I have been preparing this recipe for years, and it always causes a sensation with my guests. It is an original and delicious way to enjoy summer vegetables. The preparation is a bit long, but the result is really worth it. Perfect for a sunny lunch or a convivial dinner. Do not hesitate to vary the vegetables according to your desires and the season. A tasty and comforting vegetarian dish!

Ingredients (17 ingredients)

  • 75 g Comté
  • 2 piece Aubergine(s)
  • 1 piece Red pepper(s)
  • 1 piece Green zucchini
  • 6 piece Cherry tomato
  • 1 piece Onion(s)
  • 2 clove Garlic
  • 1 c Flat parsley
  • 1 piece Shallot
  • 3 piece Tomato
  • 1 cuillère Tomato concentrate
  • 1 trait White wine
  • 1 c Basil
  • 1 c Oregano
  • 1 tbsp Olive oil
  • 1 pinch Pepper
  • 1 pinch Salt

Preparation (12 steps)

Preheat the oven

Preheat your oven to 180°C (th.6).

Prepare the aubergines

Cut the aubergines in half lengthwise. Brush them with olive oil and sprinkle with coarse salt. Place them on a baking sheet and bake them.

Cook the aubergines in the oven

Cook the aubergines in the oven for 30 minutes at 180°C.

Prepare the vegetables

Cut the zucchini and red pepper into brunoise. Finely chop the onion and garlic.

Cook the vegetables

In the Thermomix bowl, add the chopped onion and 2 cloves of garlic. Chop 3 Sec./Stufe 5. Add a little olive oil and cook 3 Min./120°C/Stufe 1.

Add the cut vegetables

5 min/Varoma/Speed 1 Varoma

Add the zucchini and red pepper cut into brunoise to the Thermomix bowl. Also add basil, oregano, pepper and salt. Cook 5 Min./Varoma/Stufe 1.

Prepare the stuffing

Thermomix® Setting
10 sec/Speed 2/Linkslauf Reverse

Remove the inside of the cooked aubergines and add some of the flesh to the vegetable brunoise in the Thermomix bowl. Mix gently 10 Sek./Stufe 2/Linkslauf.

Stuff the aubergines

Fill the aubergines with the preparation. Garnish them with a few cherry tomatoes cut in half.

Gratin with Comté

Cover the stuffed aubergines with Comté sticks. Place them under the oven broiler for a few minutes until the cheese is melted and golden brown.

Prepare the tomato coulis

Thermomix® Setting
10 min/212°F/Speed 1 100

In the Thermomix bowl, add a finely chopped shallot and 3 tomatoes cut into brunoise. Also add 1 spoon of tomato concentrate, 1 dash of white wine, pepper and salt. Cook 10 Min./100°C/Stufe 1.

Mix the coulis

Thermomix® Setting
30 sec/Speed 8

Mix all the tomato coulis 30 Sek./Stufe 8. Finish by adding fresh basil and oregano.

Serve

Serve the stuffed gratiné aubergines with the tomato coulis flavored with basil and oregano.
