Description

This Mexican chicken with colourful vegetables is a tasty and easy to prepare dish, perfect for a quick lunch or a casual dinner. I love using red and green peppers for a touch of colour and flavour, and kidney beans and corn add a pleasant texture. The Mexican spices give this dish an authentic and warm taste. It's a dish I often make when I don't have a lot of time, but I want something comforting and full of flavour. It can easily be adapted by adding other vegetables such as courgettes or onions. A real delight!

Ingredients (10 ingredients)

  • 2 piece chicken supremes
  • 1 can kidney bean
  • 1 can corn
  • 1 piece red pepper
  • 1 piece green pepper
  • 2 piece tomatoes
  • to taste Mexican spice
  • to taste Olive oil
  • to taste Salt or fine salt
  • to taste Mill pepper

Preparation (9 steps)

Vegetable preparation

Cut the red and green peppers into strips. Peel the tomatoes after scalding them in boiling water, then cut them into strips as well. Drain the kidney beans and corn. Set aside.

Chicken preparation

Cut the chicken supremes into pieces. Season with salt and pepper.

Chicken cooking

Put a little olive oil in the Thermomix bowl. Add the chicken pieces and cook 5 Min./Varoma/Stufe 1. Remove the chicken and set aside.

Add half of the Mexican spices and the reserved chicken to the Thermomix bowl. Mix 15 Sek./Linkslauf Stufe 1.
