Ingredients (9 ingredients)

  • 225 g sugar snap peas, trimmed
  • 1 cup fresh raspberries
  • 2 tablespoons raspberry vinegar
  • 2 tablespoons olive oil
  • 1 pinch sugar
  • salt
  • pepper
  • 1 cup fresh blueberries
  • 2 cups torn mixed salad greens

Prepare Sugar Snap Peas

Thermomix® Setting

Add 1000ml water to the mixing bowl. Place the trimmed ½ pound sugar snap peas in the Varoma dish. Place Varoma on top and cook for 2 minutes/Varoma/Stufe 1. Once cooked, immediately rinse under cold water and set aside.

Prepare Raspberry Vinaigrette

Place about 1 1/2 tablespoons raspberries in a strainer over a bowl, and crush with a wooden spoon. Discard pulp. In the mixing bowl, add the strained raspberry juice, 2 tablespoons raspberry vinegar, 2 tablespoons olive oil, 1 pinch sugar, salt and pepper to taste. Mix for 10 seconds/Stufe 3.

Combine and Chill

In a large bowl, gently toss the dressing with the snap peas, remaining raspberries, and blueberries. Cover, and chill at least 30 minutes in the refrigerator.

Final Toss and Serve

Just before serving, toss the chilled salad with 2 cups torn mixed salad greens. Serve immediately.
