Description

This Thermomix® recipe for mini Hamburg buns with poppyseed butter is ideal for brunch, festive occasions or as a sweet finger food. Main ingredients are flour, yeast, sugar, milk and poppyseed. The preparation takes a total of 75 minutes and yields about 40 servings. Suitable for those who like to bake and enjoy a delicious yeast pastry. Perfect for breakfast or as a sweet side dish.

  • For the dough
  • 250 g Flour
  • 0.5 Würfel Yeast (21 g)
  • 30 g Sugar
  • 125 ml lukewarm Milk
  • 70 ml Oil
  • nach Geschmack Salt
  • For the poppyseed butter
  • 100 g Butter
  • 100 g Marzipan raw material
  • 2 EL Sugar
  • 1 Stück Egg
  • 30 g ground Poppyseed
  • 2 EL Apricot jam

Preparation (7 steps)

Prepare pre-dough

Put flour in a bowl and press a well into it. Crumble yeast into the well. Mix some sugar and milk to make a pre-dough. Cover and let rise in a warm place for about 30 minutes.

Prepare dough

Add the remaining dough ingredients to the pre-dough and knead everything well with the dough hook of a hand mixer. Cover the dough and let rise in a warm place for about 30 minutes.

Prepare poppyseed butter

Melt butter over a low heat and let cool. Finely grate marzipan raw material. Stir with sugar and egg until the marzipan has dissolved. Mix marzipan cream and ground poppyseed with the butter.

Process dough

Quarter the yeast dough. Roll out each quarter one after the other into a long rectangle (approx. 30 x 6 cm) and brush with the poppyseed marzipan butter. Roll up the dough from the long side.

Shape buns

Cut each roll into approx. 3 cm long pieces and press these in the middle, parallel to the cut edges, deep with a thin wooden spoon handle.

Bake

Spread the dough pieces on baking sheets lined with baking paper and bake one after the other in a preheated oven for about 15 minutes (electric oven: 180 °C, gas: level 3, convection oven: 160 °C).

Apply glaze

Heat apricot jam, stir until smooth and brush the mini Hamburg buns with it immediately after baking. Let cool.
