Description

These mini chocolate cakes are a real treat for chocolate lovers! The base is a soft dough rich in cocoa, while the topping is a mascarpone and chocolate cream that melts in your mouth. Perfect for a birthday party or just to pamper yourself a little. I often prepare them for my children and they disappear in the blink of an eye! The preparation is a bit long, but it is absolutely worth it. They can be decorated with chocolate sprinkles or with fresh seasonal fruit. A tip: prepare the dough in advance and keep it in the refrigerator for an even softer result.

Ingredients (12 ingredients)

  • 2 piece eggs
  • 120 g sugar
  • 120 g melted butter
  • 60 ml milk
  • 100 g melted dark chocolate
  • 120 g flour
  • 20 g bitter cocoa
  • 1 tsp baking powder
  • 200 ml sweetened vegetable cream
  • 150 g mascarpone
  • 100 g melted dark chocolate
  • chocolate sprinkles

Preparation (10 steps)

Eggs and sugar

Thermomix® Setting
2 min/Speed 4

Insert 2 eggs and 120 g of sugar into the bowl. Mix for 2 Min./level 4.

Butter and milk

Thermomix® Setting
30 Sec./Speed 3

Add 120 g of melted butter and 60 ml of milk. Mix for 30 Sec./level 3.

Melted chocolate

Thermomix® Setting
30 Sec./Speed 3

Add 100 g of melted dark chocolate. Mix for 30 Sec./level 3.

Flour, cocoa and yeast

Thermomix® Setting
30 Sec./Speed 4

Add 120 g of flour, 20 g of bitter cocoa and 1 teaspoon of baking powder. Mix for 30 Sec./level 4.

Preparation for baking

Divide the dough into muffin tins. Bake in a preheated static oven at 180°C for 20-25 minutes, or in a fan oven at 170°C for the same time. (This step is not performed with the Thermomix).

Cooling

Remove the muffins from the oven and let them cool completely. (This step is not performed with the Thermomix).

Vegetable cream

2 min/Speed 3.5

Insert 200 ml of sweetened vegetable cream into the bowl. Whip with the butterfly for 2 Min./level 3.5.

Mascarpone and chocolate

Thermomix® Setting
1 min/Speed 3

Add 150 g of mascarpone and 100 g of melted dark chocolate. Mix with the butterfly for 1 Min./level 3.

Decoration

Transfer the frosting to a pastry bag and decorate the cupcakes with a swirl. (This step is not performed with the Thermomix).

Final topping

Complete with chocolate sprinkles. (This step is not performed with the Thermomix).
