Description

These chocolate verrines are a true delight for all chocolate lovers! I especially like to make them when I have guests, as they can be prepared wonderfully in advance and are visually appealing. The combination of dark ganache and airy white chocolate mousse is simply unbeatable. The preparation is a bit more complex, but the result is worth every effort. A perfect dessert for special occasions or just to treat yourself. The verrines are rich and creamy, a real taste experience!

Ingredients (7 ingredients)

  • 80 g Dark chocolate
  • 80 g White chocolate
  • 80 g Mascarpone
  • 20 g Butter
  • 6 cl Liquid cream
  • 2 piece Egg(s)
  • 1 c. à café Icing sugar

Preparation (10 steps)

Heat cream and butter

Thermomix® Setting
3 min/194°F/Speed 1 90

Place 60 ml Liquid cream and 20 g Butter into the mixing bowl and heat for 3 Min./90°C/Speed 1.

Prepare ganache

Thermomix® Setting
20 sec/Speed 3

Add 50 g dark Chocolate in pieces and mix for 20 Sec./Speed 3 until a smooth ganache forms. Scrape down the sides with the spatula.

Spread ganache and let cool

Spread the ganache on the bottom of 4 verrines and let cool.

Melt chocolate

Thermomix® Setting
4 min/122°F/Speed 2 50

Place 80 g white Chocolate in pieces into the mixing bowl and melt for 4 Min./50°C/Speed 2. Scrape down the sides with the spatula.

Separate eggs

Separate 2 Eggs. Store the egg whites in a separate bowl.

Whisk egg whites

Thermomix® Setting
3 min/Speed 3.5

Insert the butterfly whisk. Place the egg whites into the mixing bowl and whisk until stiff for 3 Min./Speed 3.5. Add 1 tsp icing sugar after 2 minutes.

Add mascarpone and egg yolks

Thermomix® Setting
20 sec/Speed 3

Remove the butterfly whisk. Place 80 g Mascarpone and the egg yolks into the mixing bowl with the melted white chocolate and mix for 20 Sec./Speed 3.

Fold in the egg whites

Carefully fold the beaten egg whites into the white chocolate mixture.

Spread mousse and chill

Spread the white chocolate mousse on the ganache in the verrines and let it set in the refrigerator for at least 2 hours.

Decorate and serve

Thermomix® Setting
10 sec/Speed 8

Before serving, crush 30 g dark Chocolate with the Thermomix for 10 Sec./Speed 8 and decorate the verrines with it.
