Description

This mini microwave cheesecake is a quick and delicious dessert that is prepared in a matter of minutes. Ideal for those sudden cravings or when you have little time. The crunchy cookie base contrasts wonderfully with the smooth and creamy cream cheese. I often prepare it for my children as a snack, and it is always a success! You can customize it with your favorite jam or some fresh seasonal fruits. It is perfect to enjoy cold, directly from the refrigerator. Go ahead and try it, you will love it!

Ingredients (6 ingredients)

  • 120 gramos biscuits
  • 50 gramos butter
  • 200 gramos cream cheese
  • 50 gramos sugar
  • 2 piece eggs
  • 100 gramos dairy cream or yogurt

Crush the biscuits

Place 120 g of biscuits in the Thermomix bowl and crush for 10 Sec./Stufe 10 until a fine powder texture is obtained.

Melt the butter and integrate

Thermomix® Setting

Add 50 g of melted butter to the bowl with the crushed biscuits. Mix for 15 Sec./Stufe 4 until the butter is completely incorporated and a sandy dough is formed.

Prepare the base in the mold

Pour the biscuit and butter mixture into a microwave-safe mold (cup, porcelain mold, or heat-resistant glass). Press firmly with a spoon or spatula to compact the base. Reserve in the refrigerator.

Mix the cream cheese and sugar

Place 200 g of cream cheese and 50 g of sugar in the Thermomix bowl. Mix for 20 Sec./Stufe 3 until a smooth and homogeneous cream is obtained.

Add the eggs

Add 2 eggs to the bowl and mix for 15 Sec./Stufe 4 until they are completely integrated.

Incorporate the dairy cream

Thermomix® Setting
10 Seg./Speed 3

Add 100 g of dairy cream (or yogurt) to the bowl. Mix for 10 Sec./Stufe 3 until a uniform mixture is obtained. If desired, add vanilla essence or lemon/orange zest.

Pour the cream over the base

Pour the cream cheese over the cookie base in the mold. Spread evenly with a spatula.

Cook in the microwave

Cook in the microwave for 3 Min./keine/Stufe keine if a wide tray is used. If using cups, cook for 1 Min./keine/Stufe keine. The center will be shaky when finished, but will harden as it cools.

Cool and refrigerate

Let the cake cool to room temperature and then refrigerate for at least 30 minutes. Garnish with jam, coulis or sauce of preference and fresh fruits before serving.
