Description

These mini soft cupcakes are perfect for a delicious breakfast or a tasty snack. The recipe is very simple and quick, ideal for those who have little time but do not want to give up a homemade dessert. The lemon scent makes them irresistible, and the whipped cream with fresh strawberries transforms them into a small masterpiece. I often prepare them for Sunday brunch, and they always disappear in a flash! Try them, I'm sure you'll love them. They are prepared in less than half an hour and are a real pleasure for the palate.

Ingredients (11 ingredients)

  • 1 piece Eggs
  • 50 g Sugar
  • 5 ml Lemon juice
  • 0.5 piece Lemon zest
  • 70 g 00 Flour
  • 20 g Corn starch
  • 30 ml Sunflower seed oil
  • 30 ml Milk
  • 4 g Baking powder
  • 200 ml Whipped cream
  • 5 piece Strawberries

Preparation (5 steps)

Preparation of liquid ingredients

Thermomix® Setting
20 sec/Speed 3

In the Thermomix bowl, insert 1 egg, 30 ml of sunflower seed oil, 30 ml of milk, the grated zest of 1/2 lemon and 5 ml of lemon juice. Mix for 20 Sec./Stufe 3.

Addition of sugar

15 sec/Speed 3

Add 50 g of sugar into the bowl and mix for 15 Sek./Stufe 3.

Addition of powders

30 sec/Speed 4

Add 70 g of 00 flour, 20 g of corn starch and 4 g of baking powder into the bowl. Mix for 30 Sek./Stufe 4.

Preparation and cooking

Divide the dough into 5 muffin cups, filling them just over halfway. Cook in an air fryer at 150°C for 15 minutes. Meanwhile, whip 200 ml of cold refrigerator cream with the Schmetterling for 2 Min./Stufe 3.5.

Decoration

Transfer the whipped cream into a piping bag fitted with a star nozzle and set aside in the refrigerator. Remove the muffins from the oven and let them cool completely. Decorate the surface with the cream and place a strawberry on top.
