Diese kleinen Gingerbread Cheesecake Miniatures sind einfach unwiderstehlich! Ich mache sie besonders gerne zur Weihnachtszeit, aber sie sind auch ein Hit auf Geburtstagen oder anderen Feiern. Die Kombination aus dem würzigen Lebkuchenboden und der cremigen Cheesecake-Füllung ist einfach himmlisch. Sie sind super einfach zuzubereiten und sehen auch noch toll aus. Man kann sie gut vorbereiten und im Kühlschrank aufbewahren. Ein absolutes Muss für alle Cheesecake-Liebhaber!

  • 16 ounce cream cheese, softened
  • 0.75 cup white sugar
  • 2 piece eggs
  • 1 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 14 ounce gingersnap cookies

Prepare Muffin Tin

Preheat oven to 350 degrees F (175 degrees C). Line a mini muffin tin with cupcake liners. Set aside.

Create Gingersnap Base

Drop a heaping 1/2 teaspoon of gingersnap crumbs into each muffin cup.

Cream Cheese Mixture

Add 2 (8 ounce) packages of softened cream cheese, ¾ cup white sugar, 2 eggs, 1 teaspoon lemon extract, and 1 teaspoon vanilla extract to the Thermomix bowl. Mix until smooth and light. 30 Sek./Stufe 4

Assemble Cheesecake Bites

Add a teaspoon of cream cheese mixture into each muffin cup on top of the gingersnap crumbs.

Bake

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 11 minutes.

Cool and Chill

Let cool in the pan until set, about 10 minutes. Chill before serving, about 1 hour.
