Description

These cherry muffins with a hint of orange are an absolute delight! I especially like to bake them in the summer when the cherries are nice and juicy. The cream yogurt makes them particularly fluffy and the orange juice gives them a fruity note. They are perfect for a cozy brunch or as a sweet surprise for a birthday. The preparation is straightforward and succeeds with the Thermomix® in no time. If you like, you can mix a few chocolate chips into the batter. An absolute favorite recipe that is always well received by young and old!

Ingredients (11 ingredients)

  • 370 ml Cherries
  • 250 g Flour
  • 0.5 Pck. Baking powder
  • 1 pinch Salt
  • 125 g Sugar
  • 2 piece Eggs (size M)
  • 75 ml Oil
  • 150 g Cream yogurt
  • 1 piece Juice and zest of 1 untreated orange
  • Powdered sugar for dusting
  • Whipped cream and cherries for decoration

Preparation (7 steps)

Prepare cherries

Place the cherries in a sieve and drain.

Mix dry ingredients

Add 250 g flour, ½ pack baking powder, 1 pinch of salt and 125 g sugar to the mixing bowl and mix for 10 sec/speed 4.

Add liquid ingredients

20 sec/Speed 3

Add 2 eggs, 75 ml oil, 150 g cream yogurt, juice and zest of 1 untreated orange to the mixing bowl and stir for 20 sec/speed 3.

Fold in cherries

Add the drained cherries to the mixing bowl and stir in for 5 sec/reverse rotation speed 2.

Prepare muffin tin and fill with batter

Grease a muffin tin (12 cups) and dust with flour. Pour the batter evenly into the cups.

Bake muffins

Place the muffin tin in the preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) and bake for 25-30 minutes until golden brown.

Decorate muffins

Let the muffins cool on a wire rack. Dust with powdered sugar and decorate with whipped cream and cherries. Serve in paper liners if desired.
